Ingredients

  • 1 lb Shrimp – deveined and peeled
  • 2 tbsp Extra virgin olive oil
  • 4 tbsp Unsalted butter
  • ½ Medium onion – diced
  • 4 cloves Garlic – minced
  • 1 tsp Salt
  • ½ tsp Ground black pepper
  • ½ tsp Italian seasoning
  • 1 Lemon zest and juice
  • ½ tsp Red pepper flakes
  • 1 cup Dry white wine
  • Fresh parsley 
  • Parmesan cheese – grated

Instructions

  1. In a 10″ or larger cast-iron skillet, heat the olive oil and butter over medium heat, then add the onion and cook until soft and translucent, about 3-5 minutes.
  2. Stir in the garlic, red pepper flakes, Italian seasoning, and lemon zest. Cook for about 30 seconds or until fragrant.
  3. Add white wine and lemon juice and simmer for about five minutes to decrease the sauce.
  4. Add the shrimp and simmer for three minutes until they turn pink—season with salt and pepper to taste.
  5. To serve, garnish with parmesan cheese and parsley.

Leftover shrimp scampi can be refrigerated for up to 4 days in an airtight container. Cooked shrimp scampi can be frozen as well. Freeze in an airtight container for up to 3 months.
