Ingredients
- 2 pounds Lean ground turkey
- 2 ½ -3 pounds of Zucchini – sliced thinly
- 1 Onion – chopped
- 2 cups Grape tomato – cut in halves
- ¾ cup Pesto
- ¼ teaspoon Salt
- 2 tablespoon Parmesan cheese – grated
- 1 teaspoon Oil
Instructions
- Preheat a large ceramic nonstick skillet over medium heat and coat it with oil. Sauté onions for 3 minutes or until transparent.
- Add the ground turkey and cook for 5-7 minutes while breaking it up with a spoon.
- Stir in zucchini and cook for another 4-5 minutes while stirring occasionally.
- Remove from heat and add pesto and tomatoes. Mix well.
- Top with parmesan cheese and serve.
