Ingredients

  • 2 tbsp Olive oil
  • 1½ lbs Pork tenderloin
  • Salt and black pepper
  • 1 Lemon – juiced
  • 2 cloves Garlic – crushed
  • 4 tbsp Butter
  • 2 Lemons – sliced
  • 2 tbsp Heavy cream

Instructions

  1. Cut the roast into 12-inch pieces to make the pork tenderloin medallions. Put each piece in a baggie and pound it thin with a meat tenderizer or heavy skillet. Season all of the thin cutlets with salt and pepper.
  2. Heat the oil in a large saute pan over medium-high heat. Brown the pork on both sides in the skillet. Once the pork is golden brown, remove it from the pan and use the pan to make the sauce.
  3. Scrape up all of the brown bits. Add in the lemon juice, butter, and garlic and whisk to combine.
  4. Put the pork back in the pan and top with the lemon slices. Cover with a lid and cook for 5 minutes or until the pork is done.
  5. Remove the pork and lemons from the pan and arrange them on a platter. Whisk together the heavy cream and the sauce. Serve the sauce over the pork.
