Keto Pork Tenderloin with Apples Recipe

Ingredients

  • 1 tbsp Oil
  • 1 pound Pork tenderloin
  • Salt and pepper
  • 2 tbsp Butter
  • ½ cup Onion – thinly sliced
  • 1 Apple – thinly sliced
  • ¾ cup Chicken broth
  • ¼ cup Apple cider vinegar
  • ¾ cup Heavy whipping cream
  • 1 tsp Rosemary

Instructions

  1. Pork tenderloin should be cut into ½ inch pieces.
  2. Place in a plastic baggie and pound with a meat tenderizer to make a thin pork medallion. Season with salt and pepper to taste.
  3. Heat the oil in a large saute pan and brown the pork on both sides. Approximately 3 minutes per side. Set side.
  4. In the same skillet, melt the butter. Add the onions and saute for about 5 minutes or until onion begins to brown. Then add the apples and saute for a few minutes.
  5. Combine your chicken stock, vinegar, and rosemary before adding it to the apples. Reduce heat to medium-low and cover for 5 minutes.
  6. Mix in the cream. Add the pork medallions and cook in the pan for an additional 5-7 minutes.
  7. Serve plain or with rice or noodles.
