Ingredients

  • 80-100g Breadcrumbs, bread roll toasted & finely chopped
  • 20g Lard or butter
  • 80g White onion or shallot, finely chopped
  • 2 Garlic cloves, finely chopped
  • 2 tsp Dried sage or 8-10 fresh sage leaves
  • 500g Pork mince
  • 1 Large Egg

Instructions

  1. Begin by preheating the oven to 180°C.
  2. Follow the recipe to make the 90-second bread and slice it before toasting it until it becomes crunchy.
  3. Then, gently heat the lard or butter in a small frying pan and add the chopped onion and garlic, ensuring you soften them without browning for 3-5 minutes. Allow the mixture to cool for a few minutes.
  4. In a large mixing bowl, combine the pork mince, dried/fresh sage, egg, 90-second bread (crushing the bread in your hands to create a mixture of large and small breadcrumbs), and the fried onion & garlic. Use your hands to thoroughly combine all of these ingredients and divide the mixture into 12 equal portions.
  5. Finally, bake the portions for 20-25 minutes. You may also make it as a stuffing loaf in a small bread tin, but cook it for 15-20 minutes to ensure the meat is thoroughly cooked.
