Ingredients

Garlic Herb Butter

  • 6 tablespoons Unsalted butter, softened
  • 1 ½ teaspoons Garlic, finely minced
  • 1 teaspoon Fresh parsley, chopped
  • 1 teaspoon Fresh thyme leaves
  • 2 teaspoons Fresh basil, chopped
  • ¼ teaspoon Sea salt
  • 2 tablespoons Extra virgin olive oil
  • 6 Cod filets (about 4 ounces each)
  • Sea salt and black pepper, to taste
  • Fresh chopped parsley, for garnish

Instructions

  1. To make garlic-herb butter, mix the first 6 ingredients until the seasonings are thoroughly combined with the softened butter.
  2. Then, place the butter mixture on a sheet of plastic wrap and shape it into a log. Wrap it tightly and put it in the refrigerator for 15-20 minutes until it becomes firm.
  3. Dry the cod filets with a paper towel and season both sides with salt and pepper. Heat some olive oil in a large skillet over medium-high heat (refer to Notes for an alternate cooking method).
  4. Add the filets to the hot skillet and cook for 2-3 minutes until golden brown. Reduce the heat to medium and carefully flip each filet. Top each filet with an equal amount of herb butter and cook for another 3-4 minutes. While cooking, spoon the herb butter over the filets as it melts.
  5. Once the filets are cooked, remove them from the skillet onto serving plates. Drizzle the melted herb butter over them and garnish with fresh chopped parsley if desired.

Note (Keto Cod Recipe Alternative): You can bake these cod filets in the oven. Preheat the oven to 400F and bake in an oven-proof skillet or pan for 15-20 minutes (or until fish flakes easily with a fork or reaches an internal temperature of 145F). Baste with garlic herb butter 1-2 times while baking and then again after baking.
