Ingredients
- 2 pounds Raw shrimp, peeled and deveined
- 2 pounds Asparagus, trimmed and cut into bite-sized pieces
- 1 Red bell pepper, sliced into thin strips
- 1 Yellow onion, sliced
- 2 tablespoons Coconut oil
- 4 cloves Garlic, minced
- 1 tablespoon Grated ginger
- 1/4 cup Soy sauce
- 1 tablespoon Sesame oil
- 1 tablespoon Honey
- 2 tablespoons Cornstarch
- Salt and pepper, to taste
- 1/4 cup Chopped scallions for garnish
- Sesame seeds for garnish
Instructions
- Whisk together soy sauce, sesame oil, honey, and cornstarch in a small bowl. Set aside.
- Heat coconut oil in a large skillet over medium-high heat. Add the garlic and ginger, and cook for 1-2 minutes until fragrant.
- Add the shrimp to the skillet until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- Add the asparagus, red bell pepper, and yellow onion in the same skillet. Cook for 5-7 minutes until the vegetables are tender.
- Add the cooked shrimp back into the skillet with the vegetables.
- Pour the soy sauce mixture over the shrimp and vegetables, and toss to coat.
- Cook for 2-3 minutes until the sauce thickens and everything is heated.
- Season with salt and pepper to taste.
- Serve immediately, garnished with chopped scallions and sesame seeds.
