Ingredients

  • 2 pounds Raw shrimp, peeled and deveined
  • 2 pounds Asparagus, trimmed and cut into bite-sized pieces
  • 1 Red bell pepper, sliced into thin strips
  • 1 Yellow onion, sliced
  • 2 tablespoons Coconut oil
  • 4 cloves Garlic, minced
  • 1 tablespoon Grated ginger
  • 1/4 cup Soy sauce
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 2 tablespoons Cornstarch
  • Salt and pepper, to taste
  • 1/4 cup Chopped scallions for garnish
  • Sesame seeds for garnish

Instructions

  1. Whisk together soy sauce, sesame oil, honey, and cornstarch in a small bowl. Set aside.
  2. Heat coconut oil in a large skillet over medium-high heat. Add the garlic and ginger, and cook for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  4. Add the asparagus, red bell pepper, and yellow onion in the same skillet. Cook for 5-7 minutes until the vegetables are tender.
  5. Add the cooked shrimp back into the skillet with the vegetables.
  6. Pour the soy sauce mixture over the shrimp and vegetables, and toss to coat.
  7. Cook for 2-3 minutes until the sauce thickens and everything is heated.
  8. Season with salt and pepper to taste.
  9. Serve immediately, garnished with chopped scallions and sesame seeds.
