Ingredients
- 1 Head cauliflower, grated or riced
- 1 pound Ground pork
- 1 Red bell pepper, diced
- 1 Yellow onion, diced
- 1 cup Frozen peas and carrots
- 2 cloves Garlic, minced
- 3 tablespoons Soy sauce
- 2 tablespoons Sesame oil
- 1 tablespoon Olive oil
- 2 Eggs, beaten
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the ground pork and cook for 5-7 minutes, breaking it into small pieces as it cooks.
- Add the diced red bell pepper, yellow onion, frozen peas, carrots, and minced garlic to the skillet.
- Cook for 8-10 minutes until the vegetables are tender-crisp.
- Add the grated or riced cauliflower to the skillet and stir to combine.
- Make a well in the center of the skillet and add the beaten eggs. Scramble the eggs in the center of the skillet until fully cooked, then stir to combine with the rest of the ingredients.
- Drizzle the soy sauce and sesame oil over the top of the fried rice and stir to combine.
- Season with salt and pepper to taste.
