Ingredients
- 4 Mahi mahi filets
- 1/4 cup Olive oil
- 2 tablespoons Lime juice
- 2 teaspoons Paprika
- 1 teaspoon Garlic powder
- 1 teaspoon Cumin
- 1/2 teaspoon Chili powder
- Salt and pepper to taste
- 1 Mango, peeled and diced
- 1/4 Red onion, diced
- 1/4 Red bell pepper, diced
- 1 Jalapeno pepper, seeded and diced
- 2 tablespoons Chopped fresh cilantro
- 1 tablespoon Lime juice
- Salt and pepper to taste
Instructions
- Whisk together the olive oil, lime juice, paprika, garlic powder, cumin, chili powder, salt, and pepper in a small bowl. Place the mahi mahi filets in a shallow dish and pour the marinade over the top. Marinate in the refrigerator for 30 minutes.
- While the fish is marinating, prepare the mango salsa. Combine the mango, red onion, bell pepper, jalapeno pepper, cilantro, lime juice, salt, and pepper in a medium bowl. Mix well and refrigerate until ready to serve.
- Preheat a grill or grill pan to medium-high heat. Remove the mahi mahi filets from the marinade and discard the remaining marinade. Grill the fish for 5-6 minutes per side or until cooked through.
- Serve the grilled mahi mahi with the mango salsa on top. Enjoy!
