Ingredients
- 1 block of Extra-firm tofu
- 4 cups of Broccoli florets
- 1/4 cup of Low-sodium soy sauce
- 2 tablespoons of Rice vinegar
- 1 tablespoon of Honey
- 2 teaspoons of Cornstarch
- 2 tablespoons of Sesame oil
- 1 tablespoon of Grated ginger
- 1 tablespoon of Minced garlic
- Salt and pepper to taste
- Sesame seeds and green onions for garnish
Instructions
- Preheat the oven to 375°F.
- Drain the tofu and wrap it in a clean dish towel. Place it on a plate and top it with another plate. Add something heavy like a can or a book on top and let it sit for 10-15 minutes to press the excess water out of the tofu.
- Cut the tofu into small cubes.
- Whisk together the soy sauce, rice vinegar, honey, and cornstarch in a small bowl.
- Heat a large skillet over medium-high heat and add sesame oil. Once hot, add the cubed tofu and cook for 5-7 minutes, occasionally stirring until it’s golden brown on all sides.
- Add the broccoli to the skillet with the tofu and cook for 5-7 minutes until the broccoli is tender.
- Add the ginger and garlic to the skillet and cook for another 1-2 minutes until fragrant.
- Pour the sauce over the tofu and broccoli and stir to coat. Cook for 1-2 minutes until the sauce has thickened.
- Serve the tofu and broccoli over cauliflower rice, and garnish with sesame seeds and green onions if desired.
