Ingredients

  • 1 block of Firm tofu, drained and pressed
  • 2 Bell peppers (any color), sliced
  • 1 Onion, sliced
  • 2 tablespoons Olive oil
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Garlic powder
  • Salt and pepper to taste
  • Juice of 1 Lime
  • 8 low-carb Tortillas (or lettuce leaves for a lower-carb option)
  • Optional toppings: Avocado, cilantro, cheese, sour cream

Instructions

  1. Preheat the oven to 350°F.
  2. Cut the tofu into thin slices and set aside.
  3. Mix the chili powder, cumin, paprika, garlic powder, salt, and pepper in a small bowl.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers and onion and cook until softened about 5 minutes.
