Ingredients

For the Tofu:

  • 1 block of Firm tofu, drained and pressed
  • 1 tablespoon of Cornstarch
  • 1 tablespoon of Vegetable oil

For the Teriyaki sauce:

  • 1/4 cup of Soy sauce
  • 1/4 cup of Water
  • 2 tablespoons of Rice vinegar
  • 2 tablespoons of Brown sugar (or low-carb sweetener of your choice)
  • 1 tablespoon of Cornstarch
  • 1 clove of Garlic, minced
  • 1 teaspoon of Grated ginger

For the Bowl:

  • 2 cups of Cauliflower rice
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 cup of Broccoli florets
  • 1 tablespoon of Vegetable oil
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut the tofu into cubes and toss with 1 tablespoon of cornstarch until evenly coated.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the tofu and cook for 5-7 minutes, occasionally flipping, until golden and crispy. Transfer the tofu to the prepared baking sheet and bake for 10 minutes.
  4. While the tofu is baking, make the teriyaki sauce. Whisk together the soy sauce, water, rice vinegar, brown sugar or low-carb sweetener, 1 tablespoon of cornstarch, garlic, and ginger in a small saucepan. Cook over medium heat, stirring constantly, until the sauce thickens and becomes glossy.
  5. In the same skillet used to cook the tofu, add 1 tablespoon of vegetable oil and sauté the bell peppers and broccoli for 3-5 minutes until crisp-tender.
  6. Divide the cauliflower rice among 3 bowls. Top with the sautéed vegetables and tofu cubes.
  7. Drizzle the teriyaki sauce over each bowl, then sprinkle with sesame seeds and sliced green onions.
