Ingredients
For the Tofu:
- 1 block of Firm tofu, drained and pressed
- 1 tablespoon of Cornstarch
- 1 tablespoon of Vegetable oil
For the Teriyaki sauce:
- 1/4 cup of Soy sauce
- 1/4 cup of Water
- 2 tablespoons of Rice vinegar
- 2 tablespoons of Brown sugar (or low-carb sweetener of your choice)
- 1 tablespoon of Cornstarch
- 1 clove of Garlic, minced
- 1 teaspoon of Grated ginger
For the Bowl:
- 2 cups of Cauliflower rice
- 1 Red bell pepper, sliced
- 1 Green bell pepper, sliced
- 1 cup of Broccoli florets
- 1 tablespoon of Vegetable oil
- Sesame seeds for garnish
- Sliced green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the tofu into cubes and toss with 1 tablespoon of cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the tofu and cook for 5-7 minutes, occasionally flipping, until golden and crispy. Transfer the tofu to the prepared baking sheet and bake for 10 minutes.
- While the tofu is baking, make the teriyaki sauce. Whisk together the soy sauce, water, rice vinegar, brown sugar or low-carb sweetener, 1 tablespoon of cornstarch, garlic, and ginger in a small saucepan. Cook over medium heat, stirring constantly, until the sauce thickens and becomes glossy.
- In the same skillet used to cook the tofu, add 1 tablespoon of vegetable oil and sauté the bell peppers and broccoli for 3-5 minutes until crisp-tender.
- Divide the cauliflower rice among 3 bowls. Top with the sautéed vegetables and tofu cubes.
- Drizzle the teriyaki sauce over each bowl, then sprinkle with sesame seeds and sliced green onions.
