Ingredients

  • 2 small Acorn squash
  • 1 pound Ground turkey or beef
  • 1/2 Onion, diced
  • 1 Celery stalk, diced
  • 1 Carrot, peeled and diced
  • 1/2 cup Chopped mushrooms
  • 1/2 teaspoon Dried sage
  • 1/2 teaspoon Dried thyme
  • Salt and pepper, to taste
  • 1 tablespoon Olive oil
  • 1/2 cup Shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the acorn squash in half and remove the seeds.
  3. Heat the olive oil over medium-high heat in a large skillet. Add the ground turkey or beef and cook until browned.
  4. Add the onion, celery, carrot, and mushrooms to the skillet and cook until the vegetables are soft.
  5. Season the mixture with dried sage, thyme, salt, and pepper.
  6. Spoon the mixture into each acorn squash half, filling it to the top.
