Tom Colicchio’s formative years were spent in the kitchen, where he learned to cook alongside his mother and grandmother. However, it was his father who urged that he create a career out of what he was doing. Tom educated himself in the art of cooking with the aid of Jacques Pépin’s celebrated illustrated cookbooks, La Technique and La Méthode, which are considered to be the definitive guides to French cuisine. Tom made his first appearance in the kitchen of a restaurant in his home town of Elizabeth, New Jersey, when he was 17 years old and worked there. Evelyn’s Seafood Restaurant.

After that, Colicchio became a chef at a number of well-known restaurants in New York City, including The Quilted Giraffe, Gotham Bar & Grill, Rakel, and Mondrian. While he was working as the executive chef at the Mondrian, he was recognized by Food & Wine magazine as one of the ten “Best New Chefs” in the United States, and The New York Times gave the restaurant three out of a possible five stars for its cuisine.

Gramercy Tavern was first introduced to the Gramercy Park district of Manhattan by Colicchio and his business partner Danny Meyer in the month of July 1994. The food that Colicchio prepared at Gramercy Tavern received regular praise, winning him accolades such as three stars from Ruth Reichl of The New York Times and the “Best Chef in New York” Award from the James Beard Foundation in the year 2000.

Craft, which was launched by Colicchio in 2001, is located one street south of Gramercy Tavern. Almost immediately after that, The New York Times bestowed three stars upon Craft and referred to the establishment as “a vision of gourmet nirvana.” In 2002, the James Beard Foundation honored Craft as the “Best New Restaurant” with their prestigious award. In the same year, he was honored with the title of “Chef of the Year” from the publication Bon Appetit American Food and Entertaining. The New York Times went back to Craft in September 2011, ten years after the restaurant first opened its doors. The paper maintained its three-star rating for the establishment and stated that it is “just as magical and delectable as it was when it first opened.”

Colicchio decided to take his straightforward yet refined style of cooking to new heights after the success of his restaurants Craft and Craftbar, both of which are located in New York City. Since then, he has established Craftsteak at the MGM Grand in Las Vegas (2002), Craft and Craftbar in Los Angeles (2007; 2009), and Craftsteak at the MGM Grand in Foxwoods (now under construction) (2008).

In 2003, Colicchio created his first ‘wichcraft location in New York City. ‘wichcraft is a sandwich store that is anchored in the same food and service concepts as Craft. Today, ‘wichcraft can be found in 14 different locations across the five boroughs of New York City, as well as the Westfield Center in San Francisco and the MGM Grand in Las Vegas.

Colicchio is the author of three different cookbooks at this point. The first one, which was published by Clarkson Potter in 2000 and titled “Think Like a Chef,” was given the “KitchenAid” Cookbook Award by the James Beard Foundation in May of 2001. Craft of Cooking, which was Tom’s second cookbook, was published by Clarkson Potter/Publishers in the year 2003. Clarkson Potter & Publishers came up with a book about sandwiches in March of 2009, and it was inspired by the game “wichcraft.”

Tom has been putting his years of experience and extensive knowledge to use on cable television ever since 2006, when he was selected to serve as the chief judge on Bravo’s popular reality cooking series “Top Chef.” The eleventh season of the show that has won multiple Emmys has just begun.

In the beginning of 2010, he launched Colicchio & Sons in the city of New York. At Colicchio & Sons, he is known for improvising with small-batch ingredients sourced from the micro-producers and family farmers with whom he has maintained relationships spanning decades. The New York Times rated the establishment highly, awarding it three stars. In the latter half of that year, Colicchio and chef and business partner Sisha Ortuzar opened Riverpark in New York. Views of the East River can be seen from Riverpark, in addition to an urban farm that provides the restaurant with its veggies. After 30 years of dedication to the hospitality industry, Tom Colicchio was finally recognized for all of his hard work in May of the same year, when he was given the prestigious “Outstanding Chef” award by the James Beard Foundation.

Topping Rose House, a new inn that he is operating in Bridgehampton, New York, made its complete debut in 2013, but in the fall of 2012, he debuted the restaurant there.

A Place at the Table is a documentary about food insecurity in the United States that was produced by Participant Media and directed by Kristi Jacobson and Colicchio’s wife, Lori Silverbush. The film had its world premiere at the 2012 Sundance Film Festival. Tom appears in the film and also served as an executive producer on the project. On March 1, 2013, Magnolia Pictures distributed the movie to theaters.

With the inauguration of Tom Colicchio’s Heritage Steak at The Mirage, Tom brings his love of cooking over open flames to the Las Vegas Strip. The 250-seat restaurant first opened its doors in August 2013, and its primary concentration is on meats that are cooked fully over an open flame, using methods such as charcoal grills and wood-burning ovens. In the near future, Tom plans to launch a restaurant at 1 Hotel & Homes South Beach with a menu influenced by the Mediterranean that will highlight the products of South Florida’s regional farmers and fisherman.

Tom and the restaurants he owns are committed to giving back to the local community through their contributions to charitable organizations such as Children of Bellevue, City Harvest, Alex’s Lemonade Foundation, United Way of New York, and Food Bank for New York City. He and his wife Lori Silverbush, as well as their three sons, make their home in the West Village.

Top Chef Storyline for Tom Collichio

Even though Tom Colicchio, judge on Top Chef, is widely regarded as a “nice man” in the restaurant industry and has spent a significant amount of time fighting for fair work and combating issues related to food insecurity, he has not been able to avoid becoming embroiled in controversies. In 2015, a class action lawsuit was filed against the Colicchio’s ‘wichcraft sandwich business for allegedly unfairly allocating gratuities, which led to employees receiving pay that was lower than the minimum wage, as well as for not compensating employees sufficiently for working overtime.

A couple of workers asserted that they weren’t paid fairly for the time it took them each day to change into and out of their uniforms, and that they were paid for fewer hours than they actually reported working. In addition, they claimed that they weren’t paid for the time it took them to change into and out of their uniforms. This was not the first time that Colicchio has been criticized for its treatment of its employees due to labor abuses. A worker at his restaurant Craftbar filed a lawsuit against the proprietor, alleging that her tips were being illegally withheld.

Colicchio rejected the charges, but he did add that the case should be reviewed fairly and that his employees should be taken seriously. He pointed out that state minimum wage requirements can often make paying tipped staff more problematic than it initially appears to be.
