Ingredients

Chicken:

  • 1.5 lbs Boneless, skinless Chicken Breasts (700 grams)
  • 1/3 cup Olive oil
  • 3 cloves Crushed garlic
  • 2 tbsp Finely chopped fresh oregano (or 1 tsp dried oregano)
  • 1 tsp Lemon zest
  • 2 tbsp Lemon juice
  • 1 tbsp White wine vinegar
  • 2 tbsp Finely chopped fresh parsley
  • 1/2 tsp Salt and pepper

To Serve:

  • 1 Lemon, cut into slices

Instructions

  1. Cut the chicken breasts into bite-sized cubes and place them in a large zip lock bag.
  2. Add all the remaining ingredients into the bag, seal, and shake the bag to ensure the chicken is coated. Place in the refrigerator and marinate for a minimum of two hours, preferably overnight.
  3. If using wooden skewers, soak them for 15 minutes in water.
  4. Preheat the grill to medium-high heat.
  5. Thread the pieces of chicken onto the wooden skewers. Any leftover marinade from the bag should be spooned over the chicken as you place the skewers on the grill. To avoid cross-contamination, please make sure you do this straight away after grilling the raw chicken.
  6. To properly cook the chicken, cook it for 8 to 10 minutes, turning it frequently until fully cooked. Serve the chicken with tzatziki and lemon wedges.
