Ingredients

  • 1 clove Garlic
  • 2 Ginger
  • 3 tablespoon Peanut butter
  • ¼ cup Tamari sauce
  • 3 tablespoon Sesame oil
  • 2 tablespoon Water
  • ¼ cup Rice vinegar
  • Liquid stevia (about 10 drops)
  • 1 teaspoon Chili pepper flakes
  • 10.5 ounce Tofu (about 300g)
  • 1 tablespoon Coconut flour
  • 2 tablespoon Oil
  • 1 medium Zucchini
  • 2 teaspoon Sesame seeds
  • 1 teaspoon Nigella seeds

Instructions

  1. Grate the garlic and ginger into a mixing bowl. In a mixing bowl, combine the peanut butter, tamari, sesame oil, rice vinegar, stevia, water, and chili flakes. Whisk until the sauce is smooth. Set aside.
  2. Squeeze the tofu block between layers of kitchen paper to remove excess moisture. Place the tofu in a separate bowl and cut it into small cubes. Toss with the coconut flour to coat.
  3. Heat the oil in a nonstick skillet over medium-high heat. Cook the tofu in one layer for 2-3 minutes per side or until slightly golden. Stir in ¼ cup of the sauce to combine.
  4. Reduce the heat to low and cook the sauce until it becomes brown and sticky. Remove the tofu from the heat after stirring it to collect the sauce. The tofu should be crispy and golden at this point. You can put it aside to cool.
  5. Spiralize the zucchini and divide it into four microwave-safe containers. Serve the zucchini noodles with the crispy tofu on top. Divide the remaining sauce evenly among four small containers.
