Ingredients

  • 1.5 lb. Boneless, skinless chicken breasts cut into small cubes
  • 16 Cherry tomatoes
  • 1 Onion thickly sliced
  • 1 small Red orange pepper sliced
  • 1 small Green pepper sliced
  • 4 tablespoon Soy sauce
  • 2 cloves Garlic, minced
  • 1/4 cup Olive oil
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Dried thyme
  • 2 Lemons cut into wedges
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine soy sauce, garlic, olive oil, oregano, onion powder, thyme, salt, and pepper.
  2. Make sure chicken cubes and vegetables are coated with the marinade.
  3. Thread chicken and vegetables onto skewers and grill over medium-high heat, occasionally turning, for 12-15 minutes until the chicken is cooked and the vegetables are tender.
  4. If using wooden skewers, soak them in water for 30 minutes before use.
  5. Serve the grilled skewers immediately, and add lemon as a garnish if you’d like.

Marinate the chicken for at least 30 minutes or overnight for optimal flavor.
