Ingredients
- 4 Salmon filets (skin-on) – 4oz/112g each
- Salt and pepper
- 1 tablespoon Olive oil
- 2 tablespoon Butter
- 3-4 cloves Garlic – minced
- ⅔ cup Vegetable or fish broth
- ⅔ cup Heavy whipping cream
- 1 cup Cream cheese – softened
- 3 cups Broccoli flower
- 1 tablespoon Fresh parsley – chopped
- ½ teaspoon Red pepper flakes
Instructions
- Season both sides of salmon fillets with salt and pepper
- In a large non-stick pan, preheat butter and oil over medium heat.
- Once the butter has begun to foam, place the salmon skin-side down and cook for 3-4 minutes.
- Carefully flip the salmon and cook it for another 4-5 minutes or until flaky.
- Remove from pan and cover it with foil to keep it warm
- In the same pan, reduce heat to medium-low—Saute garlic for 1 minute or until fragrant.
- Stir in the heavy cream and vegetable broth and simmer.
- Mix in the cream cheese with a whisk making sure the cream cheese is fully incorporated.
- When the mixture turns smooth, Add the broccoli and cook for 6-8 minutes, or until broccoli is tender and bright green. Season with salt and pepper
- Place the salmon back into the pan and top the filets with creamy sauce. Cook for another 2 minutes or until the salmon is hot.
- Remove from pan and sprinkle with parsley and red pepper flakes. (optional)
