Keto Salmon and Broccoli Recipe

Ingredients

  • 4 Salmon filets (skin-on)  – 4oz/112g each
  • Salt and pepper
  • 1 tablespoon Olive oil
  • 2 tablespoon Butter
  • 3-4 cloves Garlic – minced
  • ⅔ cup Vegetable or fish broth
  • ⅔ cup Heavy whipping cream
  • 1 cup Cream cheese – softened
  • 3 cups Broccoli flower
  • 1 tablespoon Fresh parsley – chopped
  • ½ teaspoon Red pepper flakes

Instructions

  1. Season both sides of salmon fillets with salt and pepper
  2. In a large non-stick pan, preheat butter and oil over medium heat.
  3. Once the butter has begun to foam, place the salmon skin-side down and cook for 3-4 minutes.
  4. Carefully flip the salmon and cook it for another 4-5 minutes or until flaky.
  5. Remove from pan and cover it with foil to keep it warm
  6. In the same pan, reduce heat to medium-low—Saute garlic for 1 minute or until fragrant.
  7. Stir in the heavy cream and vegetable broth and simmer. 
  8. Mix in the cream cheese with a whisk making sure the cream cheese is fully incorporated.
  9. When the mixture turns smooth, Add the broccoli and cook for 6-8 minutes, or until broccoli is tender and bright green. Season with salt and pepper
  10. Place the salmon back into the pan and top the filets with creamy sauce. Cook for another 2 minutes or until the salmon is hot.
  11. Remove from pan and sprinkle with parsley and red pepper flakes. (optional)

How to Store the Keto Salmon and Brocolli
