Ingredients

For the Shrimp and Sausage:

  • 1 pound Raw shrimp – deveined and shelled
  • 1 tbsp Olive oil
  • 3 cloves Garlic – minced
  • Kosher salt and ground black pepper
  • Red pepper flakes
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • ½ tsp Oregano
  • ½ pounds Smoked sausage – sliced

For the Veggies:

  • 1 tbsp Olive oil
  • 1 ¼ cup Red bell pepper – diced
  • 1 cup Asparagus – sliced
  • 2 cups Zucchini – diced
  • 2 tbsp Vegetable broth

Instructions

  1. Combine the shrimp, salt, pepper, red pepper flakes, onion powder, paprika, and oregano in a mixing bowl. Mix thoroughly.
  2. Preheat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the garlic for 30 seconds. Sauté the shrimp for about 4 minutes or until they are cooked through. Be careful not to overcook them, or they will become rubbery. Set aside.
  3. Cook the smoked sausage in the same skillet for 3-5 minutes. Set aside.
  4. Add 1 tablespoon of olive oil, vegetable broth, and all other veggies to the same skillet. Reduce the heat to low-medium, cover the skillet, and cook the vegetables for 2 minutes. Stir occasionally and cook for 5 minutes more or until veggies are tender.
  5. Put the sausage and shrimp back in the skillet and stir everything up thoroughly 
  6. Garnish with fresh parsley.
