Ingredients

  • 3 Large Zucchini spiralized
  • 1 tbsp. Butter or olive oil
  • 1 lb. Shrimp peeled and deveined
  • 2 tsp Minced garlic
  • 1 tsp Italian seasoning (or equal parts dried garlic, oregano, and basil)
  • 1/4 cup Chicken Broth
  • 1 tbsp. Lemon juice
  • 2 tbsp. Chopped parsley
  • Salt and pepper to taste

Instructions

  1. Heat the butter in a big pan on medium-high heat. Place the shrimp into the pan and add Italian seasoning, salt, and pepper, according to your preference.
  2. Cook the shrimp for 2-3 minutes. After that, add garlic and cook for another minute.
  3. Pour chicken broth into the pan.
  4. Include the zucchini noodles in the pan and stir occasionally.
  5. Cook for 3-4 minutes until the zucchini noodles are tender. Add salt and pepper as required.
  6. Pour lemon juice over the shrimp and zoodles. Sprinkle parsley on top and serve.
