Ingredients
- 3 Large Zucchini spiralized
- 1 tbsp. Butter or olive oil
- 1 lb. Shrimp peeled and deveined
- 2 tsp Minced garlic
- 1 tsp Italian seasoning (or equal parts dried garlic, oregano, and basil)
- 1/4 cup Chicken Broth
- 1 tbsp. Lemon juice
- 2 tbsp. Chopped parsley
- Salt and pepper to taste
Instructions
- Heat the butter in a big pan on medium-high heat. Place the shrimp into the pan and add Italian seasoning, salt, and pepper, according to your preference.
- Cook the shrimp for 2-3 minutes. After that, add garlic and cook for another minute.
- Pour chicken broth into the pan.
- Include the zucchini noodles in the pan and stir occasionally.
- Cook for 3-4 minutes until the zucchini noodles are tender. Add salt and pepper as required.
- Pour lemon juice over the shrimp and zoodles. Sprinkle parsley on top and serve.
