Ingredients

  • 1 lb. Ground beef
  • 1 head Cauliflower, grated or riced
  • 1/2 Onion, diced
  • 2 cloves Garlic, minced
  • 2 tbsp. Olive oil
  • 2 tbsp. Soy sauce
  • 1 tsp Sesame oil
  • Salt and pepper to taste
  • Optional: chopped scallions or cilantro for garnish

Instructions

  1. Heat the olive oil over medium-high heat in a large skillet or wok.
  2. Add the diced onion, and minced garlic, and sauté for 2-3 minutes until fragrant.
  3. Add the ground beef to the skillet until browned and cooked, stirring occasionally.
  4. The cauliflower uses a food processor or box grater to cook beef, grate, or rice.
  5. Once the beef is cooked, add the grated cauliflower to the skillet, soy sauce, and sesame oil. Stir to combine.
  6. Cook the cauliflower rice with the beef for 5-7 minutes or until tender and slightly browned.
  7. Season with salt and pepper to taste.
  8. Serve the beef and cauliflower rice mixture in bowls, and garnish with chopped scallions or cilantro if desired.
