Ingredients

  • 2 Boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • Salt and pepper to taste
  • 1 head of Cauliflower, cut into florets
  • 1/2 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • 2 tablespoons Unsalted butter
  • 1/4 teaspoon Nutmeg
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread the chicken pieces in a single layer on a baking sheet and bake for 20 minutes or until fully cooked.
  4. Steam the cauliflower florets while the chicken is cooking until tender, about 10-12 minutes.
  5. Heat the heavy cream, grated Parmesan cheese, unsalted butter, and nutmeg over medium heat in a medium saucepan. Cook for 5-7 minutes, constantly whisking, until the sauce is thick and creamy.
  6. Add the steamed cauliflower to the sauce and use an immersion or regular blender to puree until smooth and creamy.
  7. Heat the remaining 1 tablespoon of olive oil over medium heat in a large skillet. Add the cooked chicken pieces to the skillet and cook for 2-3 minutes or until heated.
  8. Add the cauliflower alfredo sauce to the skillet with the chicken and toss until fully coated.
  9. Serve the low-carb chicken alfredo with chopped parsley for garnish.
