Ingredients
- 2 Boneless, skinless chicken breasts cut into bite-sized pieces

- 1 head of Cauliflower, cut into florets
- 1/2 cup Heavy cream
- 1/2 cup Grated Parmesan cheese
- 2 tablespoons Unsalted butter
- 1/4 teaspoon Nutmeg
- Chopped parsley for garnish
Instructions
- Preheat the oven to 400°F.
- In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, garlic powder, onion powder, salt, and pepper.
- Spread the chicken pieces in a single layer on a baking sheet and bake for 20 minutes or until fully cooked.
- Steam the cauliflower florets while the chicken is cooking until tender, about 10-12 minutes.
- Heat the heavy cream, grated Parmesan cheese, unsalted butter, and nutmeg over medium heat in a medium saucepan. Cook for 5-7 minutes, constantly whisking, until the sauce is thick and creamy.
- Add the steamed cauliflower to the sauce and use an immersion or regular blender to puree until smooth and creamy.
- Heat the remaining 1 tablespoon of olive oil over medium heat in a large skillet. Add the cooked chicken pieces to the skillet and cook for 2-3 minutes or until heated.
