Ingredients

  • 1 block (14-16 oz) of Firm tofu, drained and pressed
  • 4 cups Chopped kale
  • 1/2 cup Chopped cucumber
  • 1/2 cup Chopped bell pepper
  • 1/4 cup Chopped red onion
  • 1/4 cup Crumbled feta cheese (optional)
  • 1/4 cup Unsalted sunflower seeds
  • 2 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Honey
  • Salt and black pepper to taste

Instructions

  1. Whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper in a mixing bowl.
  2. Cut the tofu into small cubes and add them to the mixing bowl. Gently toss the tofu to coat with the dressing.
