Total time: 40 minutes

Ingredients

  • 1 pound Pork tenderloin
  • Salt and pepper
  • 2 tablespoons Olive oil
  • 2 cups Sliced mushrooms
  • 1/4 cup Chopped onion
  • 2 cloves Garlic, minced
  • 1/2 cup Chicken broth
  • 1/4 cup Heavy cream
  • 1/4 cup Grated parmesan cheese
  • 1/4 teaspoon Dried thyme

Instructions

  1. Preheat the oven to 375°F.
  2. Season the pork tenderloin with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork tenderloin and sear on each side for 2-3 minutes until browned.
  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the pork tenderloin reaches an internal temperature of 145°F.
  5. While the pork is baking, prepare the mushroom sauce. Add the sliced mushrooms and chopped onion to the same skillet over medium heat. Cook until the mushrooms release their liquid and the onion is tender, about 5-7 minutes.
  6. Add the minced garlic to the skillet and cook for another minute.
  7. Pour in the chicken broth and heavy cream, stirring to combine.
  8. Add the grated parmesan cheese and dried thyme, stirring until the cheese is melted and the sauce is smooth.
  9. Remove the pork tenderloin from the oven and let it rest for 5-10 minutes before slicing.
  10. Serve the sliced pork tenderloin with the mushroom sauce spooned over the top.
