Keto Chicken and Broccoli Recipe

Ingredients

  • ¾ pound Boneless Skinless Chicken Breast
  • 6 tablespoons Extra Virgin Olive Oil
  • 3 cups Broccoli Florets
  • 5 clove Garlic
  • ½ teaspoon Salt

Instructions

  1. Use a mallet to pound the chicken breasts between two sheets of parchment paper until they are the same thickness. Breasts should be cut into ¾ –1” cubes.
  2. Once hot, When the pan is heated, add the diced garlic. Once hot, chop the garlic and add it to the pan.
  3. Put the chicken cubes in once the garlic has begun to smell good. Allow the chicken to sear after two to three minutes, and turn the chicken over.
  4. Sprinkle half of the salt on top of the chicken and allow the other side to brown for about 2-3 minutes. Remove the chicken from the pan and allow it to rest.
  5. Reduce the heat to medium-low and add the final 3 tablespoons of olive oil to the pan. After adding, toss the broccoli florets in olive oil to coat them. Allow to brown for a few minutes, then sprinkle with half the salt that is left. Shake the pan to remove any browned bits on the bottom of the pan.
  6. Add the chicken back to the pan, season with the remaining salt, and stir once the broccoli starts to soften. 
  7. Cover the pan with a lid and allow to cook for a few minutes until the broccoli is tender and the chicken is cooked through. If necessary, season with salt and pepper.
