Keto Chicken and Zucchini Noodles Recipe

Ingredients

  • 200g Chicken breast
  • 2 Zucchini
  • Gluten-free soy sauce
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 2 tsp Sesame seeds
  • 1 tbsp Peanuts

Instructions

  1. Add salt and pepper to your chicken breast and, if necessary, cut it into smaller steaks. Spread a few drops of soy sauce over the meat evenly.  Let marinate for 30 minutes or overnight.
  2. Heat a pan to medium, then add olive oil. Place the chicken in the pan and cook it on medium heat for around 4-5 minutes. Turn the chicken over once it is crispy and browned, and cook the other side for a couple of minutes.
  3. Wash and dry your zucchini, then cut it into thin strips that resemble noodles using a spiralizer or vegetable julienne peeler while the chicken is cooking.
  4. Remove the chicken from the pan when it is thoroughly cooked, with golden brown and crispy skin on both sides, and then add the zucchini noodles to the pan. Toss around the pan with tongs for just a minute or two to let the zucchini soften a bit and soak up any sauces in the pan.  The zucchini should remain crunchy; avoid overcooking them and allowing them to become too soft. Remove from pan and place on a plate or in a bowl.
  5. Cut the resting chicken into strips and place them on top of the zucchini noodles. Serve the dish and sprinkle some peanuts and sesame seeds on top.
