Ingredients

Grilled Taco Chicken:

  • 1 pound Boneless, skinless chicken breasts or thighs
  • 2 tablespoons Salt
  • 2 cloves Minced garlic
  • 1 tablespoon Olive oil

Cilantro Sauce:

  • 1/2 cup Loosely packed cilantro
  • 1/2 cup Greek Yogurt or sour cream or mayo
  • 2 tablespoons Olive oil
  • 1 Jalapeno (optional)
  • 1 clove Minced garlic
  • Juice of 1/2 lime
  • Pinch of salt

To Assemble:

  • 8 leaves of Romaine Lettuce rinsed
  • 1 Avocado diced
  • 1 Tomato diced
  • 1/4 cup Onion diced

Instructions

To Cook Chicken:

In a large bowl or zip-seal bag, combine the chicken, olive oil, garlic, and spices. Put in the fridge and marinate for up to 24 hours, preferably at least 15 to 30 minutes.

Take the chicken out of the marinade and discard it. Place chicken on a grill or pan heated to medium-high heat. Cook the chicken for 9 to 10 minutes on each side until the inside is no longer pink (or until it reaches an internal temperature of 165 degrees F).

To Make Cilantro Sauce:

Combine all the ingredients in a food processor, and blend for 1 minute or until creamy.

To Assemble:

Layer lettuce wraps with chicken, tomatoes, onion, and avocado. Drizzle with cilantro sauce or your preferred taco sauce.
