Keto Salmon and Spinach Recipe

Ingredients

  • 6 Fresh salmon – 4oz/113g each
  • 10 oz Fresh spinach
  • 1 Lemon juice and zest
  • 2 cloves Garlic – minced
  • 1 tbsp Fresh parsley – chopped
  • ¼ cup Butter
  • 2 tbsp Capers
  • 1 tbsp White wine
  • 1 tbsp Olive oil
  • Salt and pepper

Instructions

  1. Preheat olive oil in a large pan over medium-high heat. For a couple of minutes, sear each piece of fish skin-side up. Remove from the pan and set aside.
  2. In the same pan, drain the excess oil and add a little butter. Sauté garlic for 20 seconds. Add in the wine.
  3. Put half of the butter, half of the parsley, capers, lemon juice, and zest. Place the salmon back with skin-side down and cover. Cook for another couple more minutes. 
  4. Remove from the pan and discard some of the sauce while keeping some in the pan. Add some spinach and the sauce and saute for another 2 minutes or until cooked.
  5. Serve with the salmon and garnish with parsley.
