Ingredients
- 6 Fresh salmon – 4oz/113g each
- 10 oz Fresh spinach
- 1 Lemon juice and zest
- 2 cloves Garlic – minced
- 1 tbsp Fresh parsley – chopped
- ¼ cup Butter
- 2 tbsp Capers
- 1 tbsp White wine
- 1 tbsp Olive oil
- Salt and pepper
Instructions
- Preheat olive oil in a large pan over medium-high heat. For a couple of minutes, sear each piece of fish skin-side up. Remove from the pan and set aside.
- In the same pan, drain the excess oil and add a little butter. Sauté garlic for 20 seconds. Add in the wine.
- Put half of the butter, half of the parsley, capers, lemon juice, and zest. Place the salmon back with skin-side down and cover. Cook for another couple more minutes.
- Remove from the pan and discard some of the sauce while keeping some in the pan. Add some spinach and the sauce and saute for another 2 minutes or until cooked.
- Serve with the salmon and garnish with parsley.
