Ingredients

For the Salmon:

  • 6 Fresh salmon – 4oz/113g each
  • 1 tbsp Fresh dill – chopped
  • Salt and pepper

For the Sauce:

  • ⅓ cup Sour cream
  • 2 tbsp Mayonnaise
  • 1 tbsp Fresh dill – chopped
  • 1 tbsp Capers
  • 1 tsp Dijon mustard
  • ½ Lemon juice and zest
  • Salt and pepper

Instructions

For the Sauce:

  1. In a bowl, mix all the ingredients and allow them to sit at room temperature while preparing the salmon.

For the Salmon:

  1. Preheat oven to 400°F (204°C)
  2. Put the salmon on a wire rack on an aluminum foil-lined baking sheet.
  3. Brush each salmon with olive oil. Season with salt and pepper, and sprinkle dill over the tops
  4. Place the salmon in the oven and bake for 10 minutes.
  5. Increase temperature to 450°F (230°C) and bake for another 5-8 minutes.
  6. Add a generous amount of the sauce on the salmon before serving, and sprinkle with some capers and dill for decoration.
