Ingredients
For the Salmon:
- 6 Fresh salmon – 4oz/113g each
- 1 tbsp Fresh dill – chopped
- Salt and pepper
For the Sauce:
- ⅓ cup Sour cream
- 2 tbsp Mayonnaise
- 1 tbsp Fresh dill – chopped
- 1 tbsp Capers
- 1 tsp Dijon mustard
- ½ Lemon juice and zest
- Salt and pepper
Instructions
For the Sauce:
- In a bowl, mix all the ingredients and allow them to sit at room temperature while preparing the salmon.
For the Salmon:
- Preheat oven to 400°F (204°C)
- Put the salmon on a wire rack on an aluminum foil-lined baking sheet.
- Brush each salmon with olive oil. Season with salt and pepper, and sprinkle dill over the tops
- Place the salmon in the oven and bake for 10 minutes.
- Increase temperature to 450°F (230°C) and bake for another 5-8 minutes.
- Add a generous amount of the sauce on the salmon before serving, and sprinkle with some capers and dill for decoration.
