Ingredients

  • ½ cup Unsalted grass-fed butter
  • 1 large Chopped onion
  • 2 Pepper
  • 3 Stalks of celery – chopped
  • 2 cans Fire-roasted tomatoes – 14.5oz each
  • 1 can Low-sodium chicken broth (about 14.5oz)
  • 2 teaspoons Fresh parsley – chopped
  • 1 ½ teaspoon Cajun seasoning
  • ½ teaspoon Kosher salt
  • 1 teaspoon Hot pepper sauce
  • 1 pound Large cooked shrimp – deveined and shelled
  • 2 Grass-fed beef sausages
  • 2 cups Cauliflower rice

Instructions

  1. Melt the butter in a large covered pot over medium heat.
  2. Mix in the onions, peppers, and celery. Cook for 6-8 minutes or until the vegetables are crisp-tender.
  3. Add diced tomatoes with juice, chicken stock, spices, and hot sauce, and bring the sauce to a boil.
  4. Reduce heat and simmer for about 20 minutes more.
  5. Add the shrimp and sausage and cook for another 3-5 minutes.
  6. Serve with cauliflower rice.
