Ingredients
- ½ cup Unsalted grass-fed butter
- 1 large Chopped onion
- 2 Pepper
- 3 Stalks of celery – chopped
- 2 cans Fire-roasted tomatoes – 14.5oz each
- 1 can Low-sodium chicken broth (about 14.5oz)
- 2 teaspoons Fresh parsley – chopped
- 1 ½ teaspoon Cajun seasoning
- ½ teaspoon Kosher salt
- 1 teaspoon Hot pepper sauce
- 1 pound Large cooked shrimp – deveined and shelled
- 2 Grass-fed beef sausages
- 2 cups Cauliflower rice
Instructions
- Melt the butter in a large covered pot over medium heat.
- Mix in the onions, peppers, and celery. Cook for 6-8 minutes or until the vegetables are crisp-tender.
- Add diced tomatoes with juice, chicken stock, spices, and hot sauce, and bring the sauce to a boil.
- Reduce heat and simmer for about 20 minutes more.
- Add the shrimp and sausage and cook for another 3-5 minutes.
- Serve with cauliflower rice.
