Ingredients
- 2-3 large Spiralized zucchini (4 cups zoodles)
- 1 ¾ pounds XL shrimp (about 800g) – deveined and shelled
- 4 cloves Garlic – minced
- 2 teaspoon Lemon zest
- 2 tablespoon Olive oil
- Sea salt and pepper
- 2 tablespoon Butter (28g)
- ¼ cup Fish stock
- 1 Lemon juice
- ¼ cup Parsley – chopped
- ½ teaspoon Pepper flakes – crushed
Instructions
- Start by using a spiralizer to create fresh zucchini noodles.
- Season shrimp with garlic, lemon zest, oil, salt, and pepper in a large bowl.
- In a large skillet over medium heat, melt the butter.
- Put the shrimp in a single layer and cook for 3 to 5 minutes on each side or until pink.
- Add lemon juice, parsley, and pepper flakes to the stock. Mix well.
- Toss in the freshly made zucchini noodles and serve right away.
