Ingredients

  • 2-3 large Spiralized zucchini (4 cups zoodles)
  • 1 ¾ pounds XL shrimp (about 800g) – deveined and shelled
  • 4 cloves Garlic – minced
  • 2 teaspoon Lemon zest
  • 2 tablespoon Olive oil
  • Sea salt and pepper
  • 2 tablespoon Butter (28g)
  • ¼ cup Fish stock
  • 1 Lemon juice
  • ¼ cup Parsley – chopped
  • ½ teaspoon Pepper flakes – crushed

Instructions

  1. Start by using a spiralizer to create fresh zucchini noodles.
  2. Season shrimp with garlic, lemon zest, oil, salt, and pepper in a large bowl.
  3. In a large skillet over medium heat, melt the butter.
  4. Put the shrimp in a single layer and cook for 3 to 5 minutes on each side or until pink.
  5. Add lemon juice, parsley, and pepper flakes to the stock. Mix well.
  6. Toss in the freshly made zucchini noodles and serve right away.
