Ingredients
- 2 large Bell peppers
- 1 pound Lean ground turkey
- 2 cups Cheddar cheese – shredded
- 8 oz Tomato sauce
- 3/4 teaspoon Salt
- 1/4 teaspoon Pepper
- 2 teaspoon Olive oil (or avocado oil)
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Using parchment paper, line a baking sheet.
- Bell peppers should be cut in half lengthwise. Scoop out the seeds and membranes after discarding the stem.
- Microwave bell pepper halves on a microwave-safe plate for 5 minutes over high heat or until tender.
- Heat the olive oil in a large nonstick frying pan over medium-high heat. Add the ground turkey and cook, while occasionally stirring, for 5 minutes or until the ground turkey is done. Mix in the tomato sauce, salt, pepper, and 1½ cups shredded cheese until well combined.
- Place the halved bell peppers on a baking sheet. Fill the peppers with the meat mixture. Top with the remaining shredded cheese.
- Bake for 15 minutes or until all the cheese is melted.
