Ingredients
- 1 tsp Avocado oil (or olive oil)
- 1 tsp Sesame oil
- ⅓ cup Onion – diced finely
- ½ cup Red bell peppers – diced finely
- 1 lb Ground turkey
- 8 oz can Water chestnuts -chopped finely
- 8-10 Romaine Lettuce leaves
For the Sauce:
- 1 tsp minced Garlic
- 1 tsp minced Fresh ginger
- ½ tsp Sesame oil
- ⅓ cup Coconut aminos
- 1 tsp Rice vinegar
- 1 tsp Tapioca starch
Instructions
- To make the sauce, combine all ingredients in a small mason jar, seal tightly, and shake until thoroughly combined. Alternatively, combine everything in a small bowl and whisk thoroughly. Place aside.
- Heat the avocado and sesame oils in a large skillet over medium-high heat. Sauté onion and bell pepper for 3-4 minutes, or until the onion and bell pepper soften.
- Mix in ground turkey, breaking it into small pieces, and cook for 6-8 minutes until browned and no longer pink. Remove any excess liquid.
- Stir in the water chestnuts and sauce to the ground turkey mixture. Reduce the heat to medium-low and cook for 2-3 minutes, stirring frequently. Season with salt and pepper to taste; if desired, top with sesame seeds.
- Serve the salad in lettuce leaves.
