Ingredients
- 1 lb Boneless pork loin
- 1tbsp Dijon mustard
- 3 cloves Garlic – minced
- 2 tbsp Fresh rosemary – sliced thinly
- 16oz Spinach leaves
- 2 tbsp Unsalted butter
- 2 tbsp Atkins Flour Mix
- ½ cup Heavy whipping cream
- ½ cup Chicken broth
- ¼ tsp Nutmeg – freshly grated
- ½ cup Parmesan cheese – grated
- Zest of 1 lemon
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Place the pork loin in a small skillet, fatty side down, over medium heat. Cook for 4 to 5 minutes or until the top is browned and some of the fat has been rendered.
- Spray with olive oil a 7”x11” baking dish and fill the dish with pork loin. In a small bowl, combine the mustard, garlic, and rosemary. Cover the pork with the mixture.
- Bake the pork loin for about 45 minutes or until an internal meat thermometer reads 145 degrees Fahrenheit.
- Remove the pork loin from the pan and place it on a cutting board to rest while you prepare the creamed spinach.
- Heat a large skillet over high heat. Add the spinach in batches and cook for about 1-2 minutes per batch, stirring to wilt and transferring the wilted spinach to a bowl as you work.
- In the same skillet, melt the butter over medium heat. When the butter has melted, add the Atkins Flour Mix and cook for 1 to 2 minutes, stirring frequently.
- Mix the cream, broth, nutmeg, and lemon zest using a whisk. Cook for 1 more minute or until the mixture begins to thicken.
- Stir in the reserved spinach and parmesan cheese until smooth and creamy.
