Ingredients
- 4 large Bell peppers, tops removed and seeds removed
- 1 lb Ground turkey
- 1 tbsp Olive oil
- 1 Onion, chopped
- 2 Garlic cloves, minced
- 1/2 cup Chopped mushrooms
- 1/2 cup Chopped zucchini
- 1/2 tsp Dried basil
- 1/2 tsp Dried oregano
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1/2 cup Shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F.
- In a large skillet, heat olive oil over medium-high heat. Add onion and garlic and cook until softened about 5 minutes.
- Add ground turkey and cook until browned about 5-7 minutes.
- Add mushrooms, zucchini, basil, oregano, salt, and black pepper. Cook until vegetables are softened, about 5 minutes.
- Spoon the turkey mixture evenly into each bell pepper.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes or until the peppers are tender.
- Remove the foil and sprinkle mozzarella cheese on each pepper.
- Bake for 10-15 minutes or until the cheese is melted and bubbly.
- Serve hot, and enjoy!
