Ingredients

  • 4 large Bell peppers, tops removed and seeds removed
  • 1 lb Ground turkey
  • 1 tbsp Olive oil
  • 1 Onion, chopped
  • 2 Garlic cloves, minced
  • 1/2 cup Chopped mushrooms
  • 1/2 cup Chopped zucchini
  • 1/2 tsp Dried basil
  • 1/2 tsp Dried oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 cup Shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat olive oil over medium-high heat. Add onion and garlic and cook until softened about 5 minutes.
  3. Add ground turkey and cook until browned about 5-7 minutes.
  4. Add mushrooms, zucchini, basil, oregano, salt, and black pepper. Cook until vegetables are softened, about 5 minutes.
  5. Spoon the turkey mixture evenly into each bell pepper.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake for 30 minutes or until the peppers are tender.
  8. Remove the foil and sprinkle mozzarella cheese on each pepper.
  9. Bake for 10-15 minutes or until the cheese is melted and bubbly.
  10. Serve hot, and enjoy!
