Ingredients

  • 1 lb. Ground turkey
  • 1 tbsp. Olive oil
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • 8 oz. Mushrooms, sliced
  • 1/2 cup Chicken broth
  • 1/2 cup Heavy cream
  • 1/2 tsp. Dried thyme
  • Salt and pepper to taste
  • 12 oz. Fresh green beans, trimmed and blanched
  • 1/2 cup Shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Heat the olive oil over medium heat in a large skillet. Add the ground turkey and cook until browned about 5-7 minutes.
  3. Add the onion and garlic to the skillet, and sauté until softened about 2-3 minutes.
  4. Add the sliced mushrooms to the skillet, and sauté until they have released their liquid and are tender about 5-7 minutes.
  5. Pour the chicken broth into the skillet, and let it simmer for 2-3 minutes.
  6. Add the heavy cream, dried thyme, salt, and pepper to the skillet, and stir until the sauce is combined.
  7. Add the blanched green beans to the skillet, and stir until they are coated in the sauce.
  8. Transfer the mixture to a greased 9×13-inch baking dish.
  9. Sprinkle the shredded cheddar cheese over the top of the casserole.
  10. Bake in the oven for 15-20 minutes or until the cheese is melted and bubbly.
  11. Serve hot, and enjoy!
