Ingredients

  • 2 Boneless pork chops
  • Salt and pepper to taste
  • 1 tablespoon Olive oil
  • 1 Avocado, diced
  • 1 Small tomato, diced
  • 1/4 Red onion, diced
  • 1 Jalapeño pepper, seeded and diced
  • 2 tablespoons Fresh cilantro, chopped
  • Juice of 1 Lime

Instructions

  1. Preheat a grill or grill pan to medium-high heat.
  2. Season the pork chops with salt and pepper.
  3. Brush the pork chops with olive oil and grill for 4-5 minutes per side or until the internal temperature reaches 145°F.
  4. While the pork chops are cooking, prepare the avocado salsa by combining the diced avocado, tomato, red onion, jalapeño pepper, cilantro, and lime juice in a bowl.
  5. Season the salsa with salt and pepper to taste.
