Ingredients

  • 4 Tilapia filets
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 Jalapeno pepper, seeded and minced
  • 1/4 cup Red onion, diced
  • 1/2 cup Cherry tomatoes, halved
  • 1 tablespoon Tomato paste
  • 1 teaspoon Smoked paprika
  • Salt and black pepper, to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic, jalapeno pepper, and red onion. Cook for 2-3 minutes, until the vegetables are softened.
  3. Add the cherry tomatoes, tomato paste, and smoked paprika. Stir to combine and cook for another 2-3 minutes, until the cherry tomatoes have softened.
  4. Place the tilapia filets in a baking dish and season with salt and black pepper to taste. Spoon the tomato and jalapeno mixture over the top of the fish.
  5. Bake the tilapia for 12-15 minutes until the fish is cooked and flakes easily with a fork.
