Ingredients
- 1 block of Firm tofu, drained and cut into cubes
- 1 bunch of Asparagus, trimmed and cut into 2-inch pieces
- 1 Red bell pepper, sliced
- 1 Yellow onion, sliced
- 2 cloves of Garlic, minced
- 2 tablespoons of Avocado oil
- 2 tablespoons of Soy sauce
- 1 tablespoon of Sesame oil
- 1 tablespoon of Rice vinegar
- Salt and pepper to taste
Instructions
- Heat avocado oil in a large skillet over medium-high heat.
- Add onion and garlic, and cook until the onion is translucent.
- Add the cubed tofu and cook until lightly browned on all sides.
- Add the asparagus and bell pepper to the skillet and cook for a few minutes until they soften.
- Mix soy sauce, sesame oil, and rice vinegar in a small bowl.
- Pour the soy sauce mixture over the tofu and vegetables, and stir to coat everything evenly.
- Continue to cook the stir-fry for a few more minutes until the vegetables are tender-crisp.
- Season with salt and pepper to taste.
