Ingredients

  • 1 block of Firm tofu, drained and cut into cubes
  • 1 bunch of Asparagus, trimmed and cut into 2-inch pieces
  • 1 Red bell pepper, sliced
  • 1 Yellow onion, sliced
  • 2 cloves of Garlic, minced
  • 2 tablespoons of Avocado oil
  • 2 tablespoons of Soy sauce
  • 1 tablespoon of Sesame oil
  • 1 tablespoon of Rice vinegar
  • Salt and pepper to taste

Instructions

  1. Heat avocado oil in a large skillet over medium-high heat.
  2. Add onion and garlic, and cook until the onion is translucent.
  3. Add the cubed tofu and cook until lightly browned on all sides.
  4. Add the asparagus and bell pepper to the skillet and cook for a few minutes until they soften.
  5. Mix soy sauce, sesame oil, and rice vinegar in a small bowl.
  6. Pour the soy sauce mixture over the tofu and vegetables, and stir to coat everything evenly.
  7. Continue to cook the stir-fry for a few more minutes until the vegetables are tender-crisp.
  8. Season with salt and pepper to taste.
