Ingredients
- 1 block of Firm tofu, drained and cubed
- 4 large Carrots, peeled and sliced into thin rounds
- 2 cloves Garlic, minced
- 1 tablespoon Fresh ginger, grated
- 2 tablespoons Soy sauce
- 1 tablespoon Sesame oil
- 1 tablespoon Olive oil
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the cubed tofu and cook until browned on all sides, about 5 minutes. Remove from skillet and set aside.
- Add sliced carrots and sauté until slightly tender in the same skillet, about 5-7 minutes.
- Add minced garlic and grated ginger to the skillet and cook for 1-2 minutes until fragrant.
- Return tofu to the skillet and add soy sauce and sesame oil. Toss to combine.
- Cook for 2-3 minutes until the tofu is heated and the sauce has coated the vegetables.
- Season with salt and pepper to taste.
- Serve hot as a side dish or over rice or quinoa for a complete meal.
