Ingredients

  • 1 block of Firm tofu, drained and cubed
  • 4 large Carrots, peeled and sliced into thin rounds
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 tablespoon Olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the cubed tofu and cook until browned on all sides, about 5 minutes. Remove from skillet and set aside.
  3. Add sliced carrots and sauté until slightly tender in the same skillet, about 5-7 minutes.
  4. Add minced garlic and grated ginger to the skillet and cook for 1-2 minutes until fragrant.
  5. Return tofu to the skillet and add soy sauce and sesame oil. Toss to combine.
  6. Cook for 2-3 minutes until the tofu is heated and the sauce has coated the vegetables.
  7. Season with salt and pepper to taste.
  8. Serve hot as a side dish or over rice or quinoa for a complete meal.
