Ingredients
- 1/2 lb Flank steak sirloin steak or skirt steak, thinly sliced against the grain
- ½ lb Asparagus trimmed and sliced
- 1 oz Scallions chopped, whites and greens separated
- 1 tbsp Fresh ginger grated
- ½ tsp Chili flakes
- ½ tsp Coriander powder
- 2 tbsp Olive oil
- Sea salt and black pepper to taste
For serving:
- 2 Lime wedges
- 1 cup Cauliflower rice cooked
- 2 tsp Roasted peanuts (optional)
Instructions
- Mix coriander powder, salt, and pepper into sliced beef.
- In a frying pan set over medium-high heat, heat 1 tablespoon of oil. Add the steak, and stir-fry the beef for 2 to 3 minutes or until browned. Set aside.
- In a skillet over medium heat, add the remaining oil, the grated ginger, chili flakes, and scallion whites, and cook for one minute while stirring. Add asparagus and cook for an additional two minutes. Return the meat to the pan, add scallion greens, and heat through. If necessary, season with additional salt and pepper.
- Serve with lime wedges, cauliflower rice, and toasted peanuts on top. (optional)
Note: Don’t cook the asparagus too long because it will get too soft and won’t taste good. You can add some green, red, and yellow bell pepper slices for a colorful dish.
