Ingredients

  • 2 tablespoons Avocado oil
  • 1 lb Ground beef
  • 1 teaspoon Dried oregano
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Sea salt
  • ¼ teaspoon Freshly cracked black pepper
  • 1 medium Onion chopped
  • 3 cloves Minced garlic
  • 1 tablespoon Tomato paste
  • 1 (14.5-ounce) can of Diced tomatoes
  • 1 ½  cups Cauliflower rice
  • 6 Bell pepper tops and cores removed
  • 1 cup Shredded Monterey Jack cheese
  • Freshly chopped parsley for garnish

Instructions

  1. Preheat oven to 400° F.
  2. Heat the oil over medium-high heat in a 10″ or larger cast iron skillet. Add the beef and spices and cook, stirring to combine for 5-7 minutes until browned. Add the onion and garlic and cook for another 4-5 minutes or until the onion softens.
  3. Add the cauliflower rice, tomato paste, and diced tomatoes. After five minutes of cooking, divide the mixture among the peppers and sprinkle cheese.
  4. Wipe out the skillet, then place the filled peppers in the skillet. Cover and bake it for 15 minutes. After that, remove the cover and turn the broiler to high. Until the cheese is bubbling, broil for 3 to 5 minutes.
  5. Top with parsley and serve.

How to Store the Keto Beef Stuffed Peppers
