Ingredients
- 1 pound Ground turkey
- 4 Bell peppers
- Kosher salt and pepper
- 2 tablespoon Olive oil – divided
- 1 Sweet onion – quartered
- 1 large Carrot – sliced about 1”
- 2 cloves Garlic
- 1 tablespoon Paprika
- 1 cup Cauliflower rice
- 1 cup Pitted black olives – chopped roughly
- 1 can (15 oz) Marina sauce
- 1 cup Mozzarella cheese – grated
- 1 tablespoon Cilantro – minced
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a medium baking sheet with parchment paper.
- Remove the seeds from the peppers by cutting them in half lengthwise through the stem. Place the pepper halves, cut side up, on the prepared pan. Season with salt and pepper and drizzle with 1 tablespoon of oil. Season the peppers all over using your hands.
- Bake for 10-12 minutes.
- Combine the onion, carrot, and garlic in a small food processor or chopper. Just pulse a few times.
- In a medium saucepan, heat the remaining tablespoon of oil. Sauté the chopped vegetables for 3-4 minutes over medium heat.
- Add in the ground turkey and smoked paprika. Cook for about 5-6 minutes or until the turkey is no longer pink in color.
- Stir in the cauliflower rice, olives, and crushed tomatoes until well combined. Cook for 5 minutes, then season with salt and pepper to taste.
- Fill each pepper slice with the mixture and top with mozzarella cheese.
- Cook for another 10-15 mins or until cheese has melted.
- Serve hot with minced cilantro on top.
