Ingredients

  • 1 ¼ pound Ground turkey
  • 10 oz Romaine lettuce
  • ½ cup Tomato
  • ½ large Cucumber
  • 8 tablespoon Black olives
  • 1 ½ tablespoon Avocado oil
  • 1 ¼ teaspoon Kosher salt
  • 1 teaspoon Cumin – ground
  • 1 tablespoon Chili powder
  • 1 teaspoon Paprika
  • ½ teaspoon Ground coriander seeds
  • 4 tablespoon Cilantro
  • 4 tablespoon Sour cream
  • 8 tablespoon Salsa
  • 4 tsp Cotija cheese – grated

Instructions

  1. Prepare the romaine lettuce by cutting it into 1″ pieces, rinsing, and spinning it dry.
  2. Also, wash the tomatoes, cucumbers, and cilantro. Cut the tomatoes in half and dice the cucumber finely. Drain and set aside the black olives. The avocado should be peeled, seeded, and sliced.
  3. Cook the ground turkey next. Heat a large skillet over medium-high heat until hot. Swirl the pan with the avocado oil. Add the ground turkey meat and start breaking it up with a spoon.
  4. Add all of the spices and kosher salt when the meat is halfway done.
  5. When the meat is almost done, add ¼ cup of water to the skillet and allow it to evaporate mostly. The water will help to distribute the spices and moisten the meat evenly.
  6. Place lettuce in the bottom of one bowl to assemble the bowls. Add the ground turkey, diced cucumbers, sliced tomatoes, and black olives to the lettuce. Sour cream and salsa should be distributed evenly among the bowls. Garnish with cilantro and cotija cheese.
