Ingredients
- 1 pound Ground turkey
- 2 packs (10oz) Frozen riced cauliflower
- 1 pack (6.5oz) Boursin cheese
- 2 tablespoon Olive oil
- 1 cup Onion – chopped
- 2 cloves Garlic – minced
- 1 pound Ground turkey
- 1 teaspoon Kosher salt
- ½ teaspoon Ground black pepper
- 2 tablespoon Flour
- 1 cup low-sodium Chicken broth
- 1 tablespoon Tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Thyme
- 1 teaspoon Rosemary
- ½ cup Corn
- ½ cup Frozen peas
- Parsley – chopped finely
Instructions
- Cook the cauliflower as directed on the package. In a food processor, combine the cauliflower and Boursin cheese until smooth. Place aside.
- Preheat the oven to 400°F (204°C).
- Heat the olive oil in a large sauté pan over medium-high heat. Cook onions and carrots for 5 minutes and stirring frequently. Add in the garlic and cook for another 1 minute or until fragrant. Mix in the ground turkey and season with salt and pepper. Cook until turkey is no longer pink, breaking it up with a spoon.
- Stir the flour into the meat until well combined. Cook for another 2 minutes. Mix in the chicken broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Stir until thoroughly combined. Bring the mixture to a boil, then reduce to a simmer and cook for 8-10 minutes or until the mixture thickens.
- Mix in the corn and peas to combine. Evenly spread the mixture on a baking sheet and top with cauliflower mash. Sprinkle with parsley(optional).
- Bake for 25 minutes, or until the cauliflower mash browns, and the mixture appears to be bubbling. Remove from the oven and leave to rest for 10 minutes before serving.
