Total time: 60 minutes

Ingredients

For Cheddar Sauce:

  • ½ cup Heavy whipping cream
  • 4 tbsp Cream cheese – diced and softened
  • ½ cup Cheddar cheese – shredded
  • ¼ teaspoon Dry mustard
  • Salt and white pepper

For the Casserole:

  • 1 lb Turkey breast – sliced
  • 1¼ lbs Asparagus spears
  • 4 Cherry tomatoes
  • Parsley

Instructions

  1. Warm the cream in a medium saucepan over medium-low heat. Whisk in the cream cheese until it is completely melted. Add the cheddar cheese one tablespoon at a time, allowing it to melt before adding more. Add in the mustard, salt, and pepper. Whisk one more time again.
  2. While assembling the casserole, preheat the oven to 350° F. Clean and trim the asparagus to the desired length.
  3.  Roll 2 asparagus spears in 1 slice of deli turkey. Place the turkey and asparagus roll seam side down in a baking dish. Repeat with the remaining turkey and asparagus until both are used up.
  4. Pour the Cheddar Sauce over the turkey and asparagus rolls, smoothing it out and distributing it evenly with a spatula.
  5. Place the tomatoes on top of the sauce, sliced thinly.
  6. To add color to the dish, sprinkle some dried parsley on top of the casserole.
  7. Bake for 30-40 minutes until the mixture is hot and bubbly.
  8. Serve immediately.
