Ingredients

  • 2 large head of Cauliflower (6 cups florets, cut off most of the stems)
  • 2 tsp Olive oil
  • 8 cloves Garlic (minced)
  • 59 ⅐ g Unsalted butter (cut into chunks)
  • 59 ⅐ g Cream cheese (cut into chunks)
  • 7 ⅖ g Sea salt (to taste)
  • Chives (optional, for garnish)

Instructions

Option 1 – Microwave Method:

  1. Put the cauliflower florets in a big bowl and add half a cup (118 mL) of water.
  2. Cover the bowl with plastic wrap and heat in the microwave for 10 to 15 minutes until the cauliflower is very soft and has a mushy texture.
  3. Drain any excess water and use a towel or paper towel to dry the cauliflower.

Option 2 – Steam Method:

  1. Prepare a large pot or saucepan by filling it with salted water, leaving enough space below the steamer basket to fit it securely. Bring the water to a boil.
  2. Place the cauliflower florets into the steamer basket on the pot. Cover the pot with a lid.
  3. Lower the heat to a simmer and cook the covered cauliflower for about 10 to 15 minutes or until it becomes very soft and has a mushy texture.

Make the Smashed Cauliflower:

  1. Warm up olive oil in a small skillet on medium heat. Add minced garlic and sauté until you can smell its aroma, which takes about a minute.
  2. Transfer the cooked cauliflower, sautéed garlic, cream cheese, butter, and salt to a food processor. Blend the ingredients for one to two minutes until the mixture becomes completely smooth.
  3. Taste the puree and add more salt as needed.
  4. Add chopped chives for garnish or drizzle melted butter on top.
