Ingredients

  • 2 ⅔ tbsp Olive oil
  • 1 cup Onion (sliced thinly into quarter moons)
  • 2 cups Mushrooms (sliced)
  • 2 cups Broccoli (cut into florets)
  • 1 ⅓ cup Snow peas
  • 2 cups Bell peppers (cut into strips; use red and yellow)
  • ⅓ tsp Sea salt
  • ⅙ tsp Black pepper
  • 1 ⅓ tbsp Unsalted butter (or more oil for dairy-free)
  • 5 ⅓ cloves Garlic (minced)
  • 2 ⅔ tbsp Chicken bone broth (or any broth of choice)
  • 2 ⅔ tbsp Coconut aminos

Instructions

  1. Heat oil in a large wok with a heavy bottom over medium-high heat until it’s very hot. You can check if the oil is hot enough by adding a drop of water, and if it sizzles away immediately, it’s ready.
  2. Add the mushrooms and onions to the wok and stir fry for 4-6 minutes until they become soft.
  3. Add the broccoli, snow peas, and bell peppers to the wok and lightly season with salt and pepper. Stir fry for 5-7 minutes until the vegetables are tender but crisp.
  4. Create a well in the center of the wok by pushing the vegetables to the sides, and add the butter to the well. Allow it to melt before adding the minced garlic. Saute the garlic without moving it for about a minute until it becomes fragrant, then mix it with the rest of the vegetables.
  5. Add the bone broth and coconut aminos and stir fry for 1-2 minutes until the sauce becomes glossy. If needed, adjust the seasoning with salt and pepper to taste. Serve over rice or cauliflower rice.
