Ingredients

  • 4 Boneless, skinless chicken breasts
  • 8 Thin slices of ham
  • 4 slices of Swiss cheese
  • 1/4 cup Almond flour
  • 1/4 cup Grated Parmesan cheese
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Dried thyme
  • 1/2 tsp Paprika
  • Salt and pepper, to taste
  • 2 large Eggs, beaten
  • 1/4 cup Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut a slit in each chicken breast to create a pocket. Stuff each pocket with 2 slices of ham and 1 slice of Swiss cheese.
  3. In a shallow bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, thyme, paprika, salt, and pepper.
  4. Dip each chicken breast in the beaten eggs, then coat it in almond flour.
  5. Heat olive oil in a large oven-safe skillet over medium heat. Add chicken breasts and cook until golden brown, about 3-4 minutes per side.
  6. Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken is cooked and the cheese is melted.
  7. Remove from the oven and rest for a few minutes before serving.
