Ingredients

  • 1 lb. diced Chicken breast
  • 1/4 cup Olive oil
  • 1/4 cup Fresh lemon juice
  • 2 cloves Garlic, minced
  • 1 tsp Dried oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 cup Plain Greek yogurt
  • 1/4 cup Cucumber, diced
  • 1/4 cup Cherry tomatoes, halved
  • 1/4 cup Red onion, diced
  • 1 tbsp. Fresh dill chopped
  • 4 Skewers

Instructions

  1. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a large bowl.
  2. Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat the grill to medium-high heat.
  4. Thread the chicken cubes onto skewers and discard the marinade.
  5. Grill the chicken skewers for about 6-8 minutes per side or until cooked through and browned on the outside.
  6. Mix Greek yogurt, cucumber, cherry tomatoes, red onion, and dill in a small bowl.
  7. Serve the chicken skewers hot with the Greek yogurt sauce on the side.
