- 1/4 cup Olive oil
- 1/4 cup Fresh lemon juice

- 1/4 cup Plain Greek yogurt
- 1/4 cup Cucumber, diced
- 1/4 cup Cherry tomatoes, halved
- 1/4 cup Red onion, diced
- 1 tbsp. Fresh dill chopped
- 4 Skewers
Instructions
- Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a large bowl.
- Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Preheat the grill to medium-high heat.
- Thread the chicken cubes onto skewers and discard the marinade.
- Grill the chicken skewers for about 6-8 minutes per side or until cooked through and browned on the outside.
